Ingredients:
2 ripe bananas
1/4 cup greek yogurt
1/4 cup vegetable oil
1/4 – 1/2 cup granulated sugar
1/4 cup brown sugar
1 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 tsp. distilled white vinegar
1 tsp. vanilla extract
1/3 cup semi-sweet chocolate chips
1/3 cup whole-grain rolled oats + 1 tbsp. for topping

Instructions:
1. Pre-heat oven to 370ºF (375ºF for muffins).
2. Place peeled bananas in mixing bowl and smash with fork until smooth and very few lumps remain.

3. Add greek yogurt, vegetable oil, granulated sugar (amount based on preference), and brown sugar. Whisk together until combined.
4. Add flour, baking soda, salt, and cinnamon. Whisk gently until these dry ingredients are incorporated.

5. Add white vinegar and vanilla extract and give it one final whisk.

6. Gently stir in chocolate chips and oats with a spoon or spatula.
7. Pour batter into loaf pan coated with cooking spray (or distribute batter evenly into lined muffin pan), top with a sprinkle of oats, and place pan into preheated oven.

8. Bake for 40 minutes at 350ºF (20 minutes at 375ºF for muffins)
Makes one 4.5 x 8 inch loaf (about) 10 muffins)
